Apple Spice Pancakes (with Homemade Pancake Mix)

These are some delicious spiced pancakes that will impress without a lot of fuss.  My kids just eat these up and keep telling me I “have to put these on my web site,” so here they are.  They’re very easy to put together if you’ve already made my Homemade Pancake Mix ahead of time.  I usually make a big batch on a weekend morning and then freeze the rest.  They reheat great in the toaster from frozen for those busy mornings when you’re scrambling to get some food in bellies.

Don’t mess around with just a dash of spice if you want especially pleasing apple spice pancakes.  Spice it up with more apple spice and you’ll get that warm apple pie flavor for breakfast.

Use good Applesauce

Using good Organic applesauce with no added sugar is the way to go with these and other recipes.  If you’ve ever bit into a crisp, juicy Organic apple, you’ll know they just taste better.  Organic applesauce is made with those already delicious apples so they don’t require adding junk to make the applesauce taste better.

I still remember my shock and appall on a trip to the store when my 1st born was a baby just starting to eat softer table food and I wanted to find him some applesauce to try as a treat. Almost every applesauce I picked up had High Fructose Corn Syrup in it! I couldn’t believe my eyes! I hate HFCS and here’s why. They’re selling this stuff that is touted as a food for children and one of the 1st ingredients is HFCS.  I was so disappointed in grocery store options for children after seeing that. That’s when I started scrutinizing every label of food or snacks I purchased for my kids even more and felt good about making a lot of my own baby food at home; knowing exactly what I was feeding my babies.

Applesauce is now used in a lot of recipes, especially for diabetics to sweeten up baked goods without all the added sugar, but do check your labels to make sure you’re not just adding garbage to your cooking efforts.

Apple Spice Pancakes {with Homemade Pancake Mix}

Makes 20 pancakes (using 1/4 cup measuring cup).  Freeze what you don’t eat.  Reheat by popping them in the toaster on “pastry” mode or “waffle & defrost.”  Or 30 secs in microwave and then toast on medium.

Ingredients

  • 2 cups Homemade Pancake Mix
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground all-spice
  • 1/4 tsp ground ginger
  • 2 eggs, lightly whisked
  • 2 cups preferred milk (I sometimes substitute 1 cup with buttermilk)
  • 2 Tbs melted butter or olive oil
  • 1/2 cup organic applesauce
  • 1 tsp vanilla extract

Instructions

  1. Combine Pancake Mix and all dry spices in a large mixing bowl.
  2. Preheat griddle or pans on 350 degrees or Medium-High.
  3. Combine eggs, milk, butter or oil, applesauce and vanilla in a medium bowl.
  4. Once wet ingredients thoroughly combined add to large dry ingredient mixing bowl and combine until no longer any dry clumps.
  5. Spray olive oil on griddle or pans if necessary (I do not need to grease my griddle at all with the butter in the pancake mix and how my griddle cooks)
  6. Use a 1/4 cup measuring cup to measure and pour your batter onto cooking surface.
  7. Cook 1st side of pancake till a bubble in the center pops doesn’t close back up, then flip and cook a couple more minutes til there’s a light golden color underneath.

Notes

I serve these with real maple syrup (not the HFCS laden fake syrup) and a lot of fresh fruit.
