All the hard boiled eggs in my house at Easter time inspired me to finally share my favorite egg salad recipe.  Creamy, smoky and sweet is one delectable combination in my food world.  If you love egg salad sandwiches, it’s hard to go wrong with this one.  I have a couple finicky little eaters in my household who don’t care even care for eggs that much who love this smoky & sweet twist on egg salad.  You must like bold flavor to enjoy this egg salad recipe, no bland flavor here.

Egg Salad A-Peel

It’s always a bit of a chore to cook eggs and peel them.  I used to dread the task of cooking eggs and peeling them because I hated fighting with egg peels after cooking them.  I’d either peel away half of the egg because it was stuck onto the egg shell or get an uneven cook on the eggs.  In the last couple years I’ve finally gotten a handle on the process of cooking and peeling eggs without the hassle.  Here’s one method that works like a charm for us.

Egg Salad with a twist

This is my classic rendition of egg salad with a twist.  It has all the components of a basic egg salad, but the taste of deviled eggs with the paprika and a hint of sweetness.  I add a lot of smoked paprika, a bit more tangy mustard and a sweet pickle relish (sometimes sweet and spicy) to this egg salad mixture.

Sandwich it, Wrap it or Spread it

People like to enjoy egg salad in many forms.  I usually sandwich it, but if you have big egg salad fans you could create mini tea sandwiches or make an egg salad pita.  Also you could try it in your favorite sandwich wrap or even on crackers as an appetizer. Whatever way you enjoy egg salad, give this delicious twist of a mix a try.

Smoky & Sweet Egg Salad

Ingredients
  

  • 6 hard boiled eggs peeled and chopped
  • 1/4 cup real mayonnaise
  • 3/4 tsp smoked paprika
  • 2 Tbsp Sweet pickle relish I prefer to use one without HFCS
  • 1 Tbsp Dijon mustard I also like to use Dusseldorf German mustard, it's got a little heat, but so good!
  • 1 tsp Lemon juice
  • 1/2 tsp celery salt
  • 1/4 sea salt
  • 1/8 tsp ground black pepper

Instructions
 

  • Hard boil and peel your eggs and let cool completely.
  • Once your eggs are cool you may chop up the eggs.
  • In a small bowl combine all remaining ingredients to make a dressing.
  • Add your chopped eggs to a medium bowl big enough to mix and hold your egg salad.
  • Add the dressing to the eggs and gently combine the eggs with the dressing till fully coated.
  • Add a any vegetables you choose like lettuce or tomato with your wrap or favorite sandwich bread along with the egg salad mixture and enjoy!

Notes

This recipe makes about 2 cups of egg salad. For sandwiches about 1/3 to 1/2 cup is ideal, depending on what bread or wrap you're using.
