Apple Spice Pancakes {with Homemade Pancake Mix}

Makes 20 pancakes (using 1/4 cup measuring cup).  Freeze what you don’t eat.  Reheat by popping them in the toaster on “pastry” mode or “waffle & defrost.”  Or 30 secs in microwave and then toast on medium.

Ingredients

  • 2 cups Homemade Pancake Mix
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground all-spice
  • 1/4 tsp ground ginger
  • 2 eggs, lightly whisked
  • 2 cups preferred milk (I sometimes substitute 1 cup with buttermilk)
  • 2 Tbs melted butter or olive oil
  • 1/2 cup organic applesauce
  • 1 tsp vanilla extract

Instructions

  1. Combine Pancake Mix and all dry spices in a large mixing bowl.
  2. Preheat griddle or pans on 350 degrees or Medium-High.
  3. Combine eggs, milk, butter or oil, applesauce and vanilla in a medium bowl.
  4. Once wet ingredients thoroughly combined add to large dry ingredient mixing bowl and combine until no longer any dry clumps.
  5. Spray olive oil on griddle or pans if necessary (I do not need to grease my griddle at all with the butter in the pancake mix and how my griddle cooks)
  6. Use a 1/4 cup measuring cup to measure and pour your batter onto cooking surface.
  7. Cook 1st side of pancake till a bubble in the center pops doesn’t close back up, then flip and cook a couple more minutes til there’s a light golden color underneath.

Notes

I serve these with real maple syrup (not the HFCS laden fake syrup) and a lot of fresh fruit.
