Instant Pot Sloppy Joes

Sweet & Sloppy Yum on a bun! These Instant Pot Sloppy Joes are so easy and quick to make.  I highly recommend toasting the buns before topping with the finished sloppy joe mixture.

Ingredients

  • 1.5 lb lean ground beef
  • 1 Tbsp olive oil
  • 3/4 cup sweet onion, diced
  • 1 bell pepper, diced (About 1 1/2 cups)
  • 2 large cloves of garlic, minced
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 1 Tbsp Worcestershire sauce ( if you don't have Worcestershire you can sub for some soy sauce)
  • 1/2 Tbsp Dijon mustard
  • 2 Tbsp brown sugar, packed
  • 1/2 cup ketchup
  • 1/4 cup water (you can use beef or chicken broth if you prefer)
  • 1 Tbsp corn starch

Instructions

  1. Set your Instant Pot to the saute setting. 
  2. Once ready, add oil and sauté onions & pepper till tender, about 4 mins.  Stirring occasionally. 
  3. Add ground beef and brown about 4-5 mins, breaking it up into small pieces.
  4. In a small ramekin, mix together 1 tablespoon of cornstarch with salt, pepper, and paprika.
  5. Add garlic and seasonings and cook another 30 secs to 1 mins.
  6. Add Worcestershire, mustard, brown sugar and ketchup and give it all a good stir through to the bottom of the pot. 
  7. Make a "cornstarch slurry" with 1/4 cup water and 1 Tbsp of cornstarch and give that a quick stir into the pot and close the Instant Pot to the sealing position. 
  8. Set the Instant pot to 5 mins high pressure.
  9. While you're waiting for the beef to cool, you can toast your buns.  Warm a skillet to medium high.  Spray them with cooking oil on cut/flat side (I use avocado oil spray).  Then set them flat side down on the skillet for just a couple mins till they're toasted to your liking.  Keep a close eye on them.  Do not walk away.
  10. Quick release once timer goes off to release all of the pressure before opening.  
  11. Once your buns are toasted, you're ready to serve your sloppy joes as is or with your favorite toppings.

Notes

** These are Gluten Free ONLY without the buns. The sloppy joe mixture is gluten free. You can serve them with gluten free buns if that is your preference. If you need a Low carb option, you can enjoy the sloppy joe mixture as lettuce wraps with some pickles, like you'd eat lettuce wraps or try it on a grilled Portobello mushroom**
