Southern Corn Pudding "Wet" Ingredients 

1 15 oz. can creamed corn

2 whole eggs

1 cup sour cream

8 Tbsp butter (1 stick)

1 cup cheddar cheese

2 cups sweet corn, fresh or frozen

1/4 cup brown sugar

Southern Corn Pudding Casserole Ingredients/Dry

DIY "Jiffy" Corn Muffin Mix

1/2 cup corn meal

1 Tbsp Baking Powder

2 Tbsp granulated sugar

3/4 tsp salt

2/3 cup all-purpose flour

1/4 tsp ground black pepper

Add "Wet" Ingredients to Large Mixing Bowl & Stir to Combine

Add DIY "Jiffy" Corn Muffin Mix to separate bowl & combine

Pre-Heat Oven to 350 degrees

Add Dry mixture to Wet Mixture in Large Bowl, Stir well to combine

Fold eggs into Corn Mixture and stir

Grease 9 X 13 Baking Dish

Pour Corn Pudding Mixture into Baking dish & Level Out

Bake Casserole for 45 minutes uncovered, until edges golden brown, bubbly and middle cooked through.  Can check with toothpick

Let casserole sit for 5-10 minutes, then serve!

You can make the Casserole a Day Ahead for a Holiday meal.  Let sit out for at least 45 mins at room Temp before Baking.
