Pumpkin Spice Pancakes are a great fall breakfast for cozy chilly mornings at home. It's easy & so satisfying!
2 Tbsp Brown Sugar
1 1/2 tsp Baking Powder
1 tsp Baking Soda
1 1/2 cups All purpose Flour
1/4 tsp Sea Salt
1 cup Milk
1/2 cup Greek Yogurt
2 whole eggs
1/2 can pumpkin puree
3 Tbsp melted butter
1 1/2 tsp vanilla extract
Dry Ingredients
Wet Ingredients
Combine all dry ingredients in a large mixing bowl
Combine all wet ingredients in a bowl or large measuring cup, except eggs
COMBINE WET & DRY
Add wet ingredients to dry in large bowl. Stir to combine.
Fold In Egg
Fold in whisked eggs in large bowl. Stir to combine but do not over-stir
Batter Up!
Your batter is ready to be cooked
ADD BATTER TO COOKING SURFACE
Add 1/4 cup scoops of batter to pre-heated cooking surface; skillet or griddle, set to medium high
Cooking pancakes
Cook batter for about 2 minutes on the 1st side. Turn once bubbles on top burst open and stay open or bottom and sides cooked to golden. Cook 1-2 mins on other side
Repeat cooking Steps & Enjoy!
Keep cooking pancakes till all batter is used. Keep cooked pancakes in warm 200 degree oven & ENJOY!
