Ingredients

  • 16 oz. fresh cranberries
  • 2 small oranges seeded, peeled and pulled apart
  • Orange rind from 1 small orange kept from 1 orange you just peeled, yes I do mean the whole rind, just break it up into pieces for the food processor
  • 2 tsp packed fresh ginger grated
  • 1/2-3/4 cup granulated cane sugar Start with 1/2 cup and then add more sugar if you prefer it sweeter
  • dash of salt

Instructions

  • Simply add all ingredients to your food processor and pulse until you get a small chunky relish type consistency, making sure all of your rind and cranberries are processed.
  • Chill the relish in the refrigerator about an hour and then enjoy!

Notes

Try this relish on crackers with cream cheese or a sliver of parmesan. Also great in place of cranberry sauce on the side of ham or turkey. Try it on sandwiches for a delicious sweet and zesty change.
