Best Easy Sriracha Deviled Eggs Recipe

This recipe makes a dozen deviled eggs. It easily doubles for a party.

Ingredients

  • 6 hard boiled eggs
  • 2 Tbsp. Mayonnaise
  • 2-2.5 Tbsp. Sriracha sauce (Adjust per your desired spiciness level)
  • 1 Tbsp. lime juice
  • 1/4 tsp. sea salt
  • 1/8 tsp. ground black pepper
  • 1/8 tsp. granulated garlic
  • 1/8 tsp. smoked paprika
  • 1 tsp honey

Optional

  • Dash cayenne pepper

Instructions

  • Grab your hard boiled eggs. If you haven't hard boiled them yet, I like to use my "shock method" for deviled eggs. (Place the uncooked eggs into a rolling boil, single layer in a big pot and then finish them in a bowl of ice water.)
  • Once hard boiled eggs have cooled completely, peel and slice eggs in half lengthwise.  Reserve the whites of the cooked eggs on the side.
  • Pop out the egg yolks of each egg half into a medium mixing bowl.
  • Use a fork to mash the yolks well until as smooth as you can get it, but almost a kind of powdery /slightly wet sand consistency.
  • Add mayo, sriracha and remaining ingredients to the egg yolk mixture. Mash and stir till well combined. I like to use a hand mixer or food processor to cream my sriracha flavored yolks mixture.
    (Taste your mix, adjust your heat level with more Sriracha here if you’d like it spicier.  I judge it based on the guests I have eating these) Adjust salt and pepper as well if need be.
  • Once your yolk filling is ready, you can start filling your eggs. If you do not have a piping or pastry bag, use a zip top plastic bag and cut 1 small corner off the bottom of the bag. Pipe the filling into the eggs in whatever style you like. I do sort of a twist into each egg white half. You should have enough filling to be fairly generous with filling the egg whites.
  • Sprinkle on some smoked paprika and/or a drizzle of sriracha.  
  • Place eggs on a serving platter in a single layer that will hold your eggs in the refrigerator till you are ready to serve them.

Notes

*Optional- sprinkle with your choice of: smoked paprika and/or green onion. Add a small ripped cilantro leaf to each egg as well.
If you don't have a deviled egg carrier or egg platter to hold your deviled eggs in place from sliding, carefully place them on a non sliding dish with some toothpicks sticking out of some and a layer of plastic wrap resting atop of the toothpicks.
