Mayo Free Pineapple Slaw (Vegan-Great for Tacos)

This flavorful slaw is amazing on seafood, tacos or really anything needing a crunchy sweet fruity addition. Give it a try on your next pulled pork sandwiches to bring their flavor to the next level!

Ingredients

  • 1 1/2 lb. cabbage -green or mixed with red finely shredded (About 1/2 medium cabbage head total)
  • 1 Tbsp. Coarse Kosher Salt for Prepping Cabbage
  • 1 Tbsp. Agave syrup
  • 20 oz. can pineapple tidbits in juice drained (reserving 1 Tbsp juice)
  • 1 Jalapeno de-stemmed and seeds removed, finely chopped
  • 1/4 cup red onion sliced into very thin quarter rounds
  • 1/4 cup green onion chopped
  • 1/4 cup cilantro leaves chopped
  • 1 Tbsp. lime juice
  • 1 Tbsp. pineapple juice from pineapple can
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  • Do this step if you have time & want really crispy slaw!  You can skip this step if you're short on time, but your slaw will be soggy after a while. 
    Place shredded cabbage in colander and add 1 Tbsp. of kosher salt, mix it up well, and allow to drain into the sink for 1 hr.  After that hour, rinse the cabbage so you don't have overly salty slaw.  
  • While the cabbage is draining you can prep the remaining ingredients; add reserved pineapple juice, lime juice, salt and pepper to small bowl and stir.  Chop and slice red onion, green onion, cilantro and jalapeno. 
  • Once the cabbage is done draining and rinsed, add all of the ingredients to a medium mixing bowl and stir well to fully combine.
  • Enjoy immediately or keep chilled in the refrigerator till ready to serve. 

Notes

Keep this slaw refrigerated and enjoy within 3-5 days. (If you followed Step #1, the salt & drain step, it will remain very crispy for these days)
Enjoy this slaw on tacos; vegan or seafood, pulled pork or by itself.  It's also great as a Vegan BBQ side or on pulled pork or chicken.
