Melon Fruit Salad with Honey Lime Mint Dressing
This recipe makes a HUGE bowl of salad (great for a party) but you can easily half if necessary.

- 1 Cantelope
- 1 Honeydew Melon
- 12 oz. Blueberries blackberries or strawberries may be substituted if preferred or in season
Fruit Salad Dressing
- 1/4 cup raw local honey
- 1 lime juiced about 1/4 cup
- zest of 1 lime about 1 tsp
- 2 Tbsp Mint leaves washed, dried and finely chopped (regular mint or peppermint herb OK. I use peppermint sometimes because it's what we have in our garden)
Cut up all melon into about 3/4"-1" cubes or melon balls if preferred.
Top with washed blueberries .
Make Dressing by combining all dressing ingredients in a small bowl and whisk well.
Pour dressing over melon and berries and combine til well incorporated.
Chill in refrigerator for 1 hr or freezer for 30 min.
