Melon Fruit Salad with Honey Lime Mint Dressing

This recipe makes a HUGE bowl of salad (great for a party) but you can easily half if necessary.

Ingredients

Fruit

  • 1 Cantelope
  • 1 Honeydew Melon
  • 12 oz. Blueberries blackberries or strawberries may be substituted if preferred or in season

Fruit Salad Dressing

  • 1/4 cup raw local honey
  • 1 lime juiced about 1/4 cup
  • zest of 1 lime about 1 tsp
  • 2 Tbsp Mint leaves washed, dried and finely chopped (regular mint or peppermint herb OK. I use peppermint sometimes because it's what we have in our garden)

Instructions

  • Cut up all melon into about 3/4"-1" cubes or melon balls if preferred.
  • Top with washed blueberries .
  • Make Dressing by combining all dressing ingredients in a small bowl and whisk well.
  • Pour dressing over melon and berries and combine til well incorporated.
  • Chill in refrigerator for 1 hr or freezer for 30 min.
