What you need for  Soft Pretzels

1.5 cups Warm Water

1 Tbsp Sugar

2.25 tsp Active Dry Yeast (1 pkg)

Kosher Salt

4 Cups All Purpose Flour

3 Tbsp Butter

2/3 Cup Baking Soda

1 Large Egg Yolk

10 Cups Water to boil

Proof Your Yeast

First- wake the yeast up.  In your mixer bowl combine the warm water (110-115F), sugar, salt and sprinkle with the yeast.   Let sit about 5 minutes.

Mix Pretzel Dough

Add the flour and melted butter and mix on low till it starts to combine.   Turn to medium and mix for 2 to 3 minutes till it pulls away from the side of the mixer bowl.

Let Pretzel Dough Double

Place dough in greased bowl. Cover and place in a warm place for about an hour or until it doubles in size.

Get Ready To Pretzel!

Put water and baking soda in large stock pot and bring to a boil.   Preheat oven to 450F.   Line 2 sheet pans with parchment paper and spray lightly with oil.

Divide and Conquer

Divide the dough into 8 equal pieces.   Roll out each piece into a rope about 3/4" to 1" thick.   Cut ropes into 1" pieces with pizza cutter or sharp knife.

Boil The Pretzels

Transfer in batches to the boiling water, don't overcrowd. Boil for 30 seconds per batch and transfer to the parchment lined baking sheets.

Transfer & Coat With Egg

Spread the pretzel bites evenly on the baking sheet and brush with the egg wash mixture. Sprinkle salt over the egg wash to help it stick.

Bake the Pretzel Bites

Bake the pretzel bites at 450F for 10-12 minutes.   Turn baking sheets part way through for even browning. Remove from baking sheets and let cool for a few minutes, then ENJOY!
