3 Japanese Eggplants 1 T Rice Vinegar ½ T Chili Garlic Sauce ½ T Sesame oil 2 tsp low sodium soy sauce 1 tsp fish sauce 1 tsp sugar 2 green onions
Cut & Air Fry
Cut just the tops off the eggplants and air fry in preheated air fryer for 10 minutes. Flip over eggplant half way through.
While the eggplants are cooking, prepare dressing by mixing together rice vinegar, chili garlic sauce, sesame oil, soy sauce, fish sauce, sugar & half the green onion in a small bowl.
After 1st Air Fry, remove eggplants from the air fryer and transfer to a cutting board. Grab some tongs, you'll need them!
With the help of tongs, make a slice into the eggplants lengthwise, about ¾ of the way through to keep each eggplant as 1 piece
Open & Baste
Spread open the middle of the eggplant and flatten with a spoon or fork. Lightly salt eggplant and baste generously with dressing
2nd/Final Air Fry
Spray air fryer rack/basket with some cooking oil, gently place eggplants on rack and air fry 6-7 more minutes depending on your desired doneness. Baste again halfway through.
Transfer eggplants from the air fryer to plates or serving dish. Top with chopped green onion. Serve with some of the spicy dressing and enjoy! Best served cut into bite size pieces.
