Smoky Garlic Roasted Mushrooms

These are some delectable mushrooms, great as a side dish or dish topping.

Equipment

Ingredients

  • 16 oz. cremini or baby bella mushrooms wiped clean with paper towels, stem trimmed & quartered
  • 2 Tbsp extra virgin olive oil
  • 4 cloves of garlic minced
  • 3/4 tsp smoked paprika
  • 3/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/2 Tbsp Italian parsley chopped
  • 1 Tbsp butter

Instructions

  • Preheat oven to 425 degrees.
  • Clean mushrooms by wiping with paper towels or clean towel, do not wash under water.  Then trim off dried end of stem and quarter.
  • Add mushrooms to a 9 X 13 baking dish.
  • In a small bowl add olive oil through black pepper and whisk well.
  • Add Oil & Spice mixture to mushrooms and stir gently with spatula till well combined. Scrape the bowl to get all that yummy goodness on those mushrooms.
  • Roast mushrooms 30 minutes, stirring 2-3 times.
  • Once done roasting add the butter, parsley and stir.
  • Ready to serve.
