Lemon & Fresh Herb Chickpea Salad
Ingredients
- 2 15- ounce cans garbanzo beans rinsed and drained
- 2 Tbsp fresh basil leaves chopped fine
- 1 Tbsp fresh flat leaf parsley chopped fine
- 1 tsp lemon zest
- About 1 Tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp granulated garlic or garlic powder
- 2 Tbsp extra virgin olive oil
- 2-3 Tbsp Asiago or Parmesan cheese freshly shredded
- A few turns of freshly cracked pepper
Instructions
- Prep all your ingredients as specified in the ingredients list.
- Add all your ingredients to a medium sized mixing bowl and stir until combined.
- Chill in the refrigerator for at least 1 hour and then enjoy!
- You can enjoy this salad over the next few days. Keep cold.
