Calico Beans (Cooked 4 Ways)

Calico Beans can be cooked 4 different ways, but in the summertime I prefer to cook them outside on the pellet grill, so the default instructions and time are for an outdoor grill.

Ingredients

1/2 cup cooked crispy bacon, chopped small or crumbled (About 5-8 slices, depending on the thickness of bacon)

1 lb. ground beef

1 15 oz. can pork & beans (Do not drain)

1 15 oz. can kidney beans, drained

1 15 oz. can butter beans, drained

1 15 oz. can lima beans, drained

1/2 cup ketchup

3/4 cup brown sugar

1 cup sweet onion, diced

1 cup celery, chopped small (About 3 large celery sticks)

3 Tbsp Apple Cider Vinegar (Can sub with white wine vinegar)

2 tsp mustard powder

1/4 tsp sea salt

1/4 tsp ground black pepper

Instructions

Oven or Pellet Grill Instructions

  1. Heat large skilllet to Medium-high heat, add oil and then the  ground beef. Brown and crumble ground beef.
  2. Preheat Oven or Pellet Grill to 350 degrees.
  3. Add all ingredients to large mixing bowl and stir to combine.
  4. Transfer bean mixture to a 11 X 9 casserole dish and cover with foil
  5. Once Oven or grill up to temperature
  6. If using a pellet grill, put calico beans dish all the way on the right side of the pellet grill.
  7. Bake for 45 mins.
  8. After the initial bake remove foil and bake another 15 minutes.

Slow Cooker/Crockpot Instructions

  1. Prepare Calico Beans as stated above, #1-3
  2. Transfer beans to Crockpot
  3. In Crockpot cook 4 hrs on High or 8 Hrs on Low.

Instant Pot Instructions

  1. Prepare Calico Beans as stated above, #1-3
  2. Transfer beans to Instant Pot
  3. Set pressure to High for 15 mins, natural release for 10 mins.
