Lemon & Fresh Herb Chickpea Salad

  • 2 15-ounce cans garbanzo beans, rinsed and drained
  • 2 Tbsp fresh basil leaves, chopped fine
  • 1 Tbsp fresh flat leaf parsley, chopped fine
  • 1 tsp lemon zest
  • About 1 Tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp granulated garlic (or garlic powder)
  • 2 Tbsp extra virgin olive oil
  • 2-3 Tbsp Asiago or Parmesan cheese, freshly shredded
  • A few turns of freshly cracked pepper


  1. Prep all your ingredients as specified in the ingredients list.
  2. Add all your ingredients to a medium sized mixing bowl and stir until combined.
  3. Chill in the refrigerator for at least 1 hour and then enjoy!
  4. You can enjoy this salad over the next few days. Keep cold.
