Low carb does not mean no carb and it also does not mean no flavor.  In fact it’s quite the opposite! You can add a ton of flavor to low carb meals.  I am an “accidental” low-carb eater now.  Up until a few months ago I was not watching my carb intake.  I loved carbs as much as all of you, but I was carb-loading without realizing it.  It took my weight struggles and a doctors’ knowledge to help me finally gain some control over my body.  Read below how my low-carb journey started and how I discovered how delicious low-carb food could actually be!  I want to share my newly found delicious dinner recipes with you. These are my 15 Best One-Pot Low Carb Meal Recipes thanks to my fellow food bloggers.  I hope you all can enjoy these amazingly easy delicious meals as well.

How my Low Carb Diet Started

I’ve always been a health conscious eater.  I consider myself sort of a foodie, but always was conscious of what I put in my mouth.  I tried to avoid highly processed foods full of preservatives for the most part, but allowed myself to indulge a little from time to time, but in moderation.  My weight started creeping up just a bit the last few years. My husband and I finally got serious about our health and weight gain just before Covid-19 hit and then just like the rest of the world, gyms closed down and we stayed home and put on any weight we had lost.  

Weight Loss Struggles

After gaining some weight post Covid, I was able to lose a little once life got a little more normal again.  Then, due to cost, we quit the gym and decided to take matters into our own hands.  I got myself an awesome Rogue Echo bike for home and started walking more. Then the weight was still packing on, till I finally couldn’t take it anymore. None of my clothes fit and I refused to buy new ones. So, in 2022, my husband and I joined a gym where we could take some classes together.  I knew if I wanted to succeed, I needed to have support and what better support, than the support of your partner in crime.  My husband also knew he had to make some changes.

Workouts & my Bloodwork

As my age crept up on me (late 40’s now) so did my weight.  Along with it, my blood pressure started rising and my yearly bloodwork showed that I had become glucose intolerant.  Not cool.  Sigh. At this point, early in 2023 I had been going to the gym for almost a year, felt stronger, my bad cholesterol went down significantly, but my weight had not.  I was definitely gaining muscle, but my clothes were still not fitting.  That’s when my endocrinologist told me I had to lower my carbs to no more than 90 total (not net carbs)/day or less or I would not lose the weight.  She also said if I wouldn’t have started working out more religiously and keep eating a large amount carbs, I’d probably be more over-weight by now.  Also, if I didn’t make a change I’d become pre-diabetic.  No thanks.  I was given the option of being put on medication to help or do it myself. So, I took matters into my own hands immediately and started my low carb diet.

The Result: Low Carb Diet & Exercise

The proof is in my blood.  I just saw my endocrinologist recently and she shared with me that I’m no longer at risk of becoming pre-diabetic at this point, according to my bloodwork 6 months after starting my new diet.   I’m also 12 pounds lighter than when I last saw her and 15 pounds lighter than the heaviest she’s ever seen me.  That was music to my ears!  My hard work with HIIT training (Thanks to Orange Theory Fitness) along with my new low-carb diet did the trick!  I never went on a full keto diet, but just low carb (not NO Carb).  I cook some keto dinners, but pretty much don’t deny myself of all carbs which I have found works best for me. It’s a diet I can retain, which is key I think to keeping the weight off long term.  So, now you know how I got here and why I’m happy to share with you all my new low carb lifestyle.  Maybe it will inspire someone else to dig deeper into why they can’t lose weight. Talk to your Doctor! Find someone who will listen to you.  It can be a very frustrating and a depressing struggle, especially when you know you’re dong everything “right” but not losing the weight. 

Delicious Low Carb One-Pot Meals

These recipes are all flavorful one pot meals with wholesome ingredients you and your family will be so excited to dig into.  They’re amazing dishes great for busy weeknights and fancy enough to make for a more formal family Sunday dinner.  These are healthy dinner or even lunch recipes when you want extra delicious flavors that won’t make you miss the starches and carbs.  I’ll break them down into categories to make it easy for you find what sounds good to you!  I hope you enjoy some of these recipes as much as I do!

Oven Baked/Roasted

1. Low Carb Chicken Divan from Simply Stacie

This is a surprisingly delicious low carb meal with cauliflower rice that had my family tricked into thinking you were eating a standard broccoli with rice casserole initially. This is a great recipe if you’re looking to use up some pre-cooked leftover chicken breast.

2. Crack Chicken from Diethood

This low carb recipe is truly the bomb!  It sounds a little wild, but cream cheese does wonders for helping to keep your chicken breast meat tender and juicy in the recipe.  The only thing I do not like about it is the name…”crack chicken.”  My entire family gets so excited when I make this recipe, but I call I call it “Crazy Good Chicken” around my kids. lol.

Don’t ignore your lowly sheet pan hiding in your kitchen! It will do wonders for your low carb diet!

3. Sheet Pan Mediterranean Shrimp by Garden in the Kitchen (Pescatarian)

This is one of the very 1st low-carb meals I made on my new diet!  It was by far one of the most delicious one-pot meals I’ve ever made.  The flavors in this recipe just make you dance in your seat, it is SO GOOD!  I added red bell peppers to this recipe as well when I was low on asparagus. It’s outstanding, between the salty olives and the creamy feta cheese.  I used pitted Italian castelvetrano green olives in place of regular pimento olives and it was amazing! ***$$$ Saving TIP***- Costco sells a large jar for $7.99 in some locations, go get some!

It’s a winner!  I’ve already made this meal a few times for friends and family and it’s a big hit!

4. Sheet Pan Salmon and Broccoli with Garlic and Parmesan from Julia’s Album (Pescatarian)

Easy Salmon with loads of protein and fiber, no carbs. Hard to go wrong!

Instant Pot/Pressure Cooker Recipes

5. Instant Pot Green Chili Chicken from EatWell101

Green chilies are not just about spiciness, they add loads of umami flavor.  Even my kids all love it and 2 of my boys are afraid of spicy flavors.  This dish brings more than a little heat, its a flavor bomb exploding in your mouth.  So good!! 

6. Instant Pot Cauliflower Soup from Don’t Mess With Mama

This is a delicious super easy creamy soup that is all sorts of low carb coziness in a bowl!  So good!

Skillet Meals (Or Dutch Oven)

Grab your cast iron skillet or just your favorite large skillet and make a delicious low carb meal in minutes!

7. Creamy Tuscan Chicken from Café Delites

This chicken stands out with it’s creamy sauce and sun-dried tomatoes that’ll make your whole family swoon.

8. Skillet Fried Cabbage with Kielbasa from Peace, Love & Low Carb

This cabbage skillet is an excellent choice when you want comfort food without the heaviness of carbs.  It’s so satisfying and a perfect meal to please the meat lovers.  I have my own version of this type of recipe, but mine’s more involved and you’d need a bit more time to cook it.  

9. Philly Cheesesteak Skillet from Low Carb Simplified

This was very popular with my family! Initially, my husband asked where the bun was…😂, but he got over it real fast. It was extra cheesy because I read a comment where someone added provolone slices on top before broiling and I did the same.

10. Paleo Frittata with Spinach from Organically Addison

The protein alone in eggs is enough to benefit a low carb diet. You don’t have to save the eggs for breakfast. This is a great savory Brinner to please!


11. Inside Out Egg roll from My Kitchen Serenity

This was a very surprising recipe. I expected 1 of my pickier kids not to like it, but he went for thirds. I actually had to cut him off! 😂 So, it was a huge hit with the fam! I did not have spicy pork sausage, but I added about 2 Tbsp of Sambel Oelek to the pork while cooking it. It turned out great and not too spicy for my kids.

12. Clear Bok Choy Soup from Masala Herb (Vegan if using Vegetable Broth)

This is a very satisfying way to enjoy low carb with all the umami flavors you’re looking for! It’s a top notch healthy Asian soup to warm you up from the inside out.


13. Moroccan Chicken from Dinner at the Zoo

This is a winning Dutch Oven dish that will wow you with it’s bold flavor! Once again, I love the Castelvano green olives for this recipe.

14. Creamy Chicken Pasanda Curry from Somebody Feed Seb

Savory curries like this never disappoint! It’s so creamy and rich, you’ll forget you’re eating something healthy!

15. Broccoli Mushroom Stir Fry from Cooktoria (Vegan)

This vegan dish will not leave you missing the meat, It’s so good with all of it’s Asian flavors. It’s like the vegan version of broccoli beef!
